A Very Simple Apple Crisp....

This is a dessert that you can easily eat the next morning!  Just not with the ice cream from the night before J. Simple clean ingredients make this recipe a crowd pleaser without having to be baking all day.  Pairing with vanilla ice cream or homemade whipped cream makes this recipe complete.  Give it a try! 

Filling:

·      6 medium Honey Crisp Apples (or any other variety you like)

·      3 tbsp. apple cider vinegar

·      2 tbs. melted coconut oil or ghee

·      1 tbs. cinnamon

·      2 tsp fresh grated ginger

·      1 tsp clove

·      ¼ tsp nutmeg

·      1 tsp vanilla extract

·      Fresh grated orange peel *optional 

Topping:

·      ½ cup Almond Flour

·      ¾ cup Pecans

·      ½ cup Walnuts

·      ½ cup pumpkin seeds

·      1/3 cup ground flaxseed

·      ½ cup coconut oil 

·      3 -4 tbsp maple syrup

·      2 tsp cinnamon 

·      Fresh ground ginger

·      1.5 tsp vanilla extract

·      pinch of sea salt 

Instructions:

1.     Preheat oven to 350 F.  Clean and dry all apples.  Thinly slice apples and place in a large mixing bowl with rest of the filling ingredients.  Mix until well combined and set aside. 

2.     Place all topping ingredients in food processor.  Pulse until well combine but not over ground. 

3.     Place apple mixture in an oiled 8x8 tray.  Evenly pour topping ingredients over apples and press down the edges.  

4.     Bake for 50-55 minutes.  Let cool for at least 15 minutes before serving.  Serve with fresh whipped cream or vanilla ice cream.
