Tuesday's are always an excuse to make tacos.  Try this recipe the next time tacos are going down at your house for dinner.  This recipe from the Sprouted Kitchen uses Shiitake Mushrooms and is jam packed with different vitamins a minerals.  Shiitake Mushrooms are an excellent source of copper, pantothenic acid and selenium. They also contain vitamin B2, zinc, manganese, vitamin B6, niacin, choline, dietary fiber, vitamin D and folate.  Give this recipe a try the next time you want to make Taco Tuesday a little more plant based.

Food can be so beautiful! These  Mini Pumpkin Empanadas from Whats Cooking Good Looking not only look great but taste amazing too!  Its fall so it's the perfect time to get stocked up on some pumpkin.  My empanadas did not look as beautiful as hers, but its all about how it tastes rite !  I will continue to practice my empanada skills but in the mean time give it a try and let me know how yours come out!

Sweet potatoes are one of my all time favorites for lunch. They are super healthy and easy to digest giving me tons of energy for the rest of my day in the clinic.   Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.  You can load them up with a bunch of different toppings and have a fulfilling meal.  Try this recipe and let me know what you think.
