This recipe might sound unusual but the taste is worth the try.  Its jam packed with protein and fiber keeping you satisfied for hours.  It is a different take on pasta with red sauce but totally worth changing it up.  I have made this recipe a few times and have had no complaints at my house.  Eggplant is a very good source of dietary fiber, vitamin B1 and copper. It is also a good source of manganese, vitamin B6, niacin, potassium, folate and vitamin K. Give this recipe a try and let me know what you think.  Use any type of pasta your heart desires!  There are so many choices these days for all different types of diets including gluten free and paleo, or you can always get your spiralizer out and make it a pure veggie meal.  Let me know if you tried any different variations
